Ingredients
2 Chicken breasts, boneless and skinless
4 Garlic cloves, minced
1 Lemon, juiced and zested
2 tablespoons Butter
1 tablespoon Olive oil
1 teaspoon Salt
1/2 teaspoon Cracked black pepper
1/2 teaspoon Paprika (optional)
8 oz Linguine pasta
1 cup Heavy cream
1 cup Freshly grated Parmesan cheese
2 tablespoons Fresh parsley, chopped
Instructions
1. Cube the chicken, mince the garlic, zest and juice your lemon, and chop the parsley. Boil water for the linguine.
2. In a hot skillet with olive oil, sear the chicken until golden. Add butter, garlic, lemon zest, and juice. Sauté until coated and fragrant. Set aside.
3. Boil linguine until al dente. Drain and reserve some pasta water.
4. In the same skillet, add cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth. Add pasta water if needed for consistency.
5. Add the linguine to the sauce. Toss well. Top with the chicken bites and a sprinkle of parsley and extra cheese. Serve hot.
Notes
For extra flavor, marinate the chicken in lemon juice, garlic, and oil for 30 minutes before cooking.
Use freshly grated Parmesan instead of pre-shredded for a smoother sauce.
Reserve pasta water to loosen the sauce when combining with linguine.
