Golden, cheesy, and delightfully crispy, these Leftover Mashed Potato Cheese Puffs turn yesterday’s mash into muffin tin magic. They’re perfect as a side, snack, or fun party bite, and the best part is how easy they are to whip up with ingredients you likely already have in your kitchen.


Ingredients

2 cups leftover mashed potatoes

1 cup shredded cheddar cheese

2 large eggs, beaten

3 tablespoons all-purpose flour

1/2 teaspoon garlic powder

Salt and black pepper to taste

Grated parmesan cheese (for topping)

Chopped fresh chives (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C) and grease a mini muffin tin.
  2. In a mixing bowl, combine mashed potatoes, cheddar cheese, eggs, flour, garlic powder, salt, and pepper. Mix well.
  3. Spoon the mixture into the muffin tin, filling each cavity almost to the top.
  4. Sprinkle grated parmesan and optional chives on top.
  5. Bake for 20-25 minutes until golden and crispy on top.
  6. Let cool in tin for 5 minutes, then remove and serve warm.
