Description
Juicy Korean BBQ meatballs glazed in a sweet and smoky sauce, served over fluffy rice with crisp vegetables and a drizzle of spicy mayo for the perfect balance of flavors and textures.
Ingredients
500g ground beef or pork
60g breadcrumbs
1 large egg
2 cloves garlic, minced
1 tsp fresh ginger, grated
2 tbsp soy sauce
120ml Korean BBQ sauce
600g cooked rice
1 cucumber, thinly sliced
1 medium carrot, shredded
60ml spicy mayo
2 green onions, chopped
1 tbsp sesame seeds
Instructions
1. Combine ground meat, breadcrumbs, egg, garlic, ginger, and soy sauce in a mixing bowl.
2. Shape mixture into evenly sized meatballs.
3. Bake meatballs on a parchment-lined sheet at 400°F (200°C) for 15–18 minutes, or air fry until cooked through.
4. In a small saucepan, simmer Korean BBQ sauce until slightly thickened.
5. Toss cooked meatballs in the sauce until fully coated.
6. Assemble bowls with rice, meatballs, cucumber slices, shredded carrots, and a drizzle of spicy mayo.
7. Garnish with green onions and sesame seeds before serving.
Notes
For extra crispy meatballs, broil them for 2 minutes after baking.
Use freshly cooked rice to keep the bowls warm and fluffy.
Double the sauce recipe if you prefer extra glaze for drizzling.
