Description
This Korean BBQ Beef Bowl with Corn & Creamy Sauce combines charred, marinated beef, golden buttery corn, fluffy rice, and a tangy garlic-chili sauce. Perfect for a flavorful weeknight dinner or meal prep.
Ingredients
1 lb beef sirloin or ribeye
1/4 cup soy sauce
2 tbsp brown sugar
1 tbsp sesame oil
2 cloves garlic, minced
1 tsp grated ginger
2 cups cooked rice
1 cup corn kernels
1 tbsp butter
2 tbsp chopped cilantro or scallions
3 tbsp mayonnaise
2 tbsp sour cream
1 small clove garlic, minced (for sauce)
1/2 tsp chili flakes
Salt to taste
Instructions
1. In a mixing bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger. Add beef slices and marinate for 30 minutes.
2. Cook the rice in a rice cooker or pot. Once fluffy, set aside.
3. Heat a skillet over medium-high heat. Sear marinated beef until browned, 2–3 minutes per side.
4. In a separate pan, melt butter and sauté corn until golden and slightly charred. Season with a pinch of salt.
5. In a small bowl, whisk together mayonnaise, sour cream, garlic, chili flakes, and a dash of salt until smooth.
6. Assemble bowls with rice, seared beef, corn, and a drizzle of the creamy sauce. Garnish with cilantro or scallions.
Notes
Slice beef thinly across the grain for the most tender texture.
For a lighter version, substitute sour cream with Greek yogurt.
You can grill the beef outdoors for an even smokier BBQ flavor.
