Ingredients
2 large chicken breasts
3 cups broccoli florets
8 oz cream cheese, softened
1/2 cup heavy cream
1 1/2 cups shredded cheddar cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika (optional)
Instructions
1. Place chicken breasts at the bottom of the crockpot. Season with salt, pepper, garlic powder, and onion powder.
2. In a mixing bowl, whisk cream cheese and heavy cream until smooth. Pour over the chicken.
3. Add broccoli florets on top. Do not stir.
4. Cover and cook on LOW for 5–6 hours or HIGH for 3 hours, until chicken is tender.
5. Remove chicken and shred it with forks. Return shredded chicken to the crockpot.
6. Stir to combine with sauce and broccoli.
7. Top with shredded cheddar cheese and cover for 10–15 minutes until melted.
8. Optional: Transfer to a baking dish and broil for a bubbly cheese top.
Notes
For crispier broccoli, stir it in during the last hour instead of the beginning.
Freshly shredded cheese melts better and avoids added carbs from anti-caking agents.
Use a broiler-safe dish to crisp the top if you love a golden cheese crust.
