Meal-prep friendly, freezer-friendly, and great for weeknight dinners or gatherings.
Ingredients
1 pound ground chicken
1 small onion, grated
3 cloves garlic, grated
3 tablespoons fresh parsley, chopped
2 tablespoons fresh dill, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil (for brushing)
Instructions
1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with olive oil.
2. In a large bowl, combine ground chicken, grated onion, grated garlic, parsley, dill, cumin, coriander, paprika, salt, and pepper. Mix gently until just combined.
3. Shape the mixture into 1.5-inch meatballs using your hands or a scoop. Place them on the prepared sheet.
4. Brush each meatball with olive oil.
5. Bake for 20–25 minutes, or until golden brown and fully cooked through (internal temp: 165°F).
6. Serve hot with your favorite dip, rice, or stuffed into pita with salad.
Notes
Don’t skip the grated onion—it keeps the chicken juicy and adds sweetness.
Let the meatball mix rest for 10 minutes before shaping for easier handling.
Use an ice cream scoop for uniform size and even cooking.
