Ingredients
2 lbs potatoes (Yukon gold or russet), peeled and diced
3 jalapeños, diced (seeds removed for less heat)
8 oz cream cheese, softened
1 ½ cups shredded cheddar cheese
6 slices bacon, cooked and crumbled
1 medium yellow onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
2 tbsp butter
¼ cup green onions, sliced (for garnish)
Salt and pepper, to taste
Instructions
1. In a large Dutch oven, melt butter over medium heat. Add diced onion, garlic, and jalapeños. Sauté until softened and fragrant, about 5 minutes.
2. Stir in diced potatoes and chicken broth. Bring to a boil, then reduce heat to a simmer. Cook for 15–20 minutes, or until potatoes are fork-tender.
3. Partially blend the soup using an immersion blender or mash some potatoes with a masher to thicken the texture.
4. Reduce heat to low. Add cream cheese and shredded cheddar, stirring until melted and fully incorporated. Pour in the heavy cream and mix until smooth.
5. In a separate skillet, cook bacon until crispy. Crumble and set aside.
6. Serve the soup hot, topped with bacon, extra cheese, sliced green onions, and more jalapeño slices if desired.
Notes
For a spicier kick, leave some jalapeño seeds in or add extra jalapeños as garnish.
To lighten the soup, use half-and-half instead of heavy cream and reduce the amount of cheese.
