Ingredients
1 cup lemon spread (store-bought or homemade)
12 almond biscuits or light cookies
1 tablespoon powdered sugar (for dusting)

4 egg yolks
1/2 cup granulated sugar
1/3 cup fresh lemon juice
1 tablespoon lemon zest
3 tablespoons unsalted butter
Instructions
- Prepare Lemon Spread (if making from scratch): In a saucepan, whisk together egg yolks, sugar, lemon juice, and zest. Cook over medium heat until thickened. Remove from heat and whisk in butter. Let cool completely.
- Lay the Base: Place one biscuit on a serving dish. Spoon a generous layer of lemon spread on top.
- Build the Stack: Repeat with another biscuit and another layer of lemon spread, ending with a biscuit on top.
- Dust with Sugar: Sprinkle powdered sugar over the top for a finished look.
- Chill and Serve: Refrigerate for 20 minutes before serving to allow the layers to set.
