Description

This Italian Grinder Salad brings together the bold flavors of a classic deli sandwich in a refreshing, hearty salad. With cheese-stuffed tortellini, crisp romaine, zesty banana peppers, and a creamy herbed dressing, it’s a fork-friendly version of your favorite grinder. Perfect for potlucks, lunches, or a fuss-free dinner.


Ingredients

1 package (9 oz) cheese tortellini

2 cups chopped romaine lettuce

1 cup arugula

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

1/3 cup banana peppers, sliced

1/2 cup cubed provolone cheese

1/3 cup sliced salami

1/3 cup chopped ham

1/3 cup sliced pepperoni

1/3 cup mayonnaise

1 1/2 tablespoons red wine vinegar

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

Salt and black pepper to taste


Instructions

1. Bring a pot of salted water to a boil and cook tortellini according to package directions. Drain and rinse under cold water. Set aside.

2. While tortellini cools, chop the romaine, arugula, cherry tomatoes, red onion, and banana peppers. Slice deli meats into strips and cube the provolone.

3. In a small bowl, whisk together mayonnaise, red wine vinegar, Italian seasoning, garlic powder, salt, and black pepper until smooth.

4. In a large bowl, combine tortellini, vegetables, meats, and cheese. Pour dressing over top and toss gently until evenly coated.

5. Refrigerate for at least 20 minutes before serving to let flavors meld. Serve chilled or at room temperature.

Notes

Make sure your tortellini is fully cooled before tossing into the salad to avoid wilting the greens.

For a lighter dressing, substitute half the mayo with plain Greek yogurt.

Prep the components ahead of time, but keep the dressing separate until ready to serve for maximum freshness.
