Ingredients
6 cups day-old brioche or challah bread, cubed
6 large eggs
1 ½ cups whole milk
½ cup heavy cream
½ cup brown sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
1 tablespoon butter (for greasing)
Optional: extra cinnamon sugar or butter for topping
Instructions
1. Cut the bread into 1-inch cubes and place in a greased 9×13-inch baking dish.
2. In a large bowl, whisk together eggs, milk, cream, brown sugar, vanilla, cinnamon, nutmeg, and salt.
3. Pour the custard evenly over the bread cubes, pressing down gently to soak.
4. Cover and refrigerate overnight or at least 30 minutes.
5. Preheat oven to 350°F (175°C).
6. Optionally top with cinnamon sugar or small dots of butter.
7. Bake for 45–50 minutes, until the center is set and the top is golden.
8. Let cool slightly, then serve with maple syrup or toppings of your choice.

Use day-old bread for the best texture—it soaks up the custard without becoming soggy.
Letting it rest overnight enhances flavor and ensures even baking.
