1 pound ground beef
1 small yellow onion, diced
2 cloves garlic, minced
2 tablespoons taco seasoning
1 cup green enchilada sauce (plus extra for topping)
8 corn tortillas
2 cups shredded Mexican cheese blend
1/4 cup red onion, finely diced (for garnish)
1 medium tomato, diced (for garnish)
1/4 cup fresh cilantro, chopped (for garnish)
Lime wedges, for serving
Instructions
1. Preheat oven to 375°F (190°C).
2. In a skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent.
