Ingredients

4 cups green cabbage, thinly sliced

2 tablespoons olive oil

1 teaspoon turmeric powder

1 teaspoon cumin seeds

1 teaspoon red chili powder (adjust to taste)

1 teaspoon ginger-garlic paste

1 teaspoon salt

2 tablespoons fresh cilantro, chopped


Instructions

1. Preheat oven to 400°F (200°C).

2. Remove outer leaves of the cabbage and slice the rest into thin, even strips.

3. In a large mixing bowl, add cabbage, olive oil, turmeric, cumin seeds, chili powder, ginger-garlic paste, and salt. Toss well until every piece is coated.

4. Spread cabbage evenly on a parchment-lined baking sheet.

5. Roast for 20–25 minutes, flipping halfway, until the edges are golden and slightly crispy.

6. Garnish with chopped cilantro and serve hot.

Notes

For best results, ensure the cabbage is spread in a single layer while roasting—crowding leads to steaming, not crisping.

If you don’t have an oven, a skillet on medium-high heat can mimic the roast effect, just stir often to avoid burning.

To increase flavor complexity, add a pinch of garam masala or smoked paprika just before serving.
