Ingredients
2 chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon salt
½ teaspoon black pepper
¼ cup hot honey
¼ cup crumbled feta cheese
1 teaspoon chopped fresh thyme or rosemary (optional)
Instructions
1. Pat the chicken breasts dry and rub them with olive oil. Season both sides with garlic powder, smoked paprika, salt, and pepper.
2. Heat a cast iron skillet over medium-high heat. Sear the chicken for 3 to 4 minutes per side until golden.
3. Drizzle hot honey over the chicken while in the skillet. Let it sizzle and coat the surface.
4. Transfer skillet to a preheated 400°F oven and bake for 10 to 12 minutes or until the chicken reaches 165°F. Alternatively, broil for 2 to 3 minutes to caramelize the glaze.
5. Remove from the oven and immediately sprinkle with crumbled feta cheese so it begins to soften.
6. Garnish with fresh herbs if using. Serve hot with your favorite sides.
Notes
Let the feta sit on the hot chicken for 1–2 minutes so it softens without fully melting.
You can make your own hot honey by simmering honey with red chili flakes for 2–3 minutes.
Sear chicken in batches if needed to avoid overcrowding the skillet and losing that golden crust.
