Description

These Honey Roasted Carrots are tender, sweet, and beautifully caramelized with a butter-honey-garlic glaze. Perfect as a side dish for weeknight meals or festive gatherings, they’re quick to make yet full of rich flavor.


Ingredients

1 ½ pounds carrots

2 tablespoons honey

2 tablespoons unsalted butter (melted)

1 tablespoon olive oil

2 cloves garlic (minced)

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon fresh parsley (chopped, optional)


Instructions

1. Preheat oven to 400°F (200°C).

2. Peel and trim the carrots. Slice in half lengthwise if thick.

3. In a mixing bowl, combine melted butter, olive oil, honey, garlic, salt, and pepper.

4. Toss carrots in the mixture until well coated.

5. Arrange carrots in a single layer on a lined baking sheet.

6. Roast for 25–30 minutes, flipping halfway through, until tender and golden-brown.

7. Garnish with chopped parsley and serve warm.

Notes

For the best caramelization, don’t overcrowd the baking sheet.

Use rainbow carrots for a more colorful and eye-catching presentation.

Reheat leftovers in the oven or skillet to maintain texture.
