Description

These Honey Garlic Butter Roasted Carrots are the ultimate combination of sweet, savory, and buttery. Perfectly caramelized in the oven, they deliver a melt-in-your-mouth texture and a flavor punch from honey and garlic. Whether you’re planning a holiday meal or need a simple side dish to elevate your weeknight dinner, these carrots never disappoint.

Ingredients

1 lb carrots

3 tablespoons unsalted butter

2 tablespoons honey

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

1. Preheat the oven to 400°F (200°C).

2. Peel the carrots and cut them into uniform pieces if needed.

3. In a small saucepan, melt the butter over medium heat.

4. Stir in the honey and garlic, letting the mixture simmer gently for 1 minute.

5. Place the carrots in a mixing bowl and pour the honey garlic butter over them. Toss to coat evenly.

6. Spread the carrots in a single layer on a parchment-lined baking sheet.

7. Roast for 25–30 minutes, flipping halfway through, until tender and caramelized.

8. Transfer to a serving dish and sprinkle with fresh parsley if using. Serve warm.

Notes

Use parchment paper or a silicone mat to prevent sticking and help with easy cleanup.

For deeper flavor, try roasting whole heirloom carrots with stems trimmed.

Reheat leftovers in the oven to restore crisp edges and warm flavors.
