Sticky, sweet, smoky, and a little spicy — these Honey Chipotle Chicken Bowls bring a powerhouse of flavor. Juicy grilled chicken is glazed with a honey-chipotle sauce and layered over fluffy white rice, then surrounded with corn, avocado, lettuce, and fresh toppings. Perfect for weeknight dinners or meal prep.


Ingredients

1.5 pounds boneless, skinless chicken thighs

1/4 cup honey

2 chipotle peppers in adobo sauce, chopped

2 tablespoons adobo sauce

2 tablespoons lime juice

2 cloves garlic, minced

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups cooked white rice

1 avocado, sliced

1 cup corn (cooked or grilled)

1 cup shredded lettuce

1/2 cup diced tomatoes

1/4 cup chopped fresh cilantro


Instructions

  1. In a bowl, whisk together honey, chopped chipotle peppers, adobo sauce, lime juice, garlic, olive oil, salt, and pepper.
  2. Add chicken thighs, coat well, cover and marinate for 30 minutes to 2 hours.
  3. Heat a grill pan or skillet over medium-high heat.
  4. Cook chicken 5-6 minutes per side until charred and cooked through. Let rest 5 minutes, then slice.
  5. Cook white rice according to package instructions.
  6. Assemble bowls: start with rice, top with sliced chicken, and arrange corn, avocado, lettuce, and tomatoes.
  7. Drizzle with leftover sauce and garnish with cilantro and extra lime juice.
