Ingredients

1 pound ground beef

8 large eggs

1 cup milk

1 cup shredded cheddar cheese (divided)

1/2 red bell pepper, diced

1/2 green bell pepper, diced

1/2 cup diced onion

1/4 cup sliced black olives

1 tablespoon taco seasoning

1/4 cup chopped green onions (for garnish)


Instructions

1. Preheat oven to 375°F (190°C) and grease a 9×13″ baking dish.

2. In a nonstick skillet, cook the ground beef until browned. Drain excess grease, then stir in taco seasoning and a splash of water. Let it simmer for 2–3 minutes.

3. In the same skillet, sauté the diced onions and bell peppers until softened.

4. In the baking dish, layer the seasoned beef, sautéed veggies, black olives, and half of the shredded cheese.

5. In a bowl, whisk together the eggs and milk until smooth. Pour the egg mixture over the layered ingredients in the dish.

6. Top with the remaining cheddar cheese.

7. Bake uncovered for 35–40 minutes, or until the center is set and the top is golden brown.

8. Cool slightly, garnish with chopped green onions, and serve warm.

Notes

To make it ahead, assemble the night before and bake fresh in the morning.

For extra texture, add a layer of frozen hash browns before the meat.

You can swap cheddar for pepper jack or Mexican blend cheese for more heat.
