Whether made with leftover roast chicken or from scratch, every spoonful feels like home.


Ingredients

2 tablespoons olive oil

1 medium yellow onion, diced

3 large carrots, peeled and sliced

3 celery stalks, sliced

4 garlic cloves, minced

8 cups chicken broth

2 cups cooked shredded chicken

2 teaspoons dried thyme

1 teaspoon dried basil

1 teaspoon salt

1⁄2 teaspoon black pepper

3 cups egg noodles

2 tablespoons fresh parsley, chopped (plus more for garnish)


Instructions

1. Heat olive oil in a large Dutch oven over medium heat.

2. Add diced onion, carrots, and celery. Sauté for 5–6 minutes until softened.

3. Stir in minced garlic and cook for another 30 seconds.

4. Pour in the chicken broth and bring to a gentle boil.

5. Add shredded chicken, thyme, basil, salt, and pepper. Reduce to a simmer for 15 minutes.

6. Stir in egg noodles and cook uncovered for 8–10 minutes until al dente.

7. Add fresh parsley and adjust seasoning if needed.

8. Serve hot, garnished with extra parsley if desired.

Notes

For deeper flavor, simmer the soup with a parmesan rind and remove before serving.

Always add noodles right before serving to keep them from soaking up all the broth.

Use rotisserie chicken to save time without compromising on flavor.
