This Homemade Chicken & Dumplings recipe is a cozy, comforting classic made from tender shredded chicken, a rich savory broth, and soft, fluffy dumplings. Perfect for family dinners or cold nights, it delivers warmth and satisfaction in every bite.
Ingredients
1 ½ lbs chicken, bone-in and skinless
3 carrots, peeled and sliced
2 stalks celery, diced
1 yellow onion, chopped
3 cloves garlic, minced
6 cups chicken broth (low sodium preferred)
1 bay leaf
3 sprigs fresh thyme
1 ½ cups all-purpose flour
2 teaspoons baking powder
¾ cup milk
3 tablespoons unsalted butter, melted
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Heat oil in a large Dutch oven over medium heat. Sauté onions, carrots, and celery until softened (5–7 minutes). Add garlic and cook 1 more minute.
2. Add chicken, broth, bay leaf, and thyme. Bring to a boil, then reduce heat. Simmer covered for 30–35 minutes until chicken is tender.
3. Remove chicken, shred it, discard bones, and return meat to pot.
4. In a bowl, whisk together flour, baking powder, and salt. Stir in melted butter and milk until a sticky dough forms.
5. Drop spoonfuls of dumpling dough into simmering soup. Cover and cook without lifting the lid for 15 minutes.
6. Season with salt and pepper to taste. Gently stir and serve warm.
Notes
Don’t peek while the dumplings cook – they need steam to rise properly.
If reheating leftovers, add a splash of broth or water to loosen the consistency.
Use rotisserie chicken as a shortcut for a faster version.
