8 cups chicken broth
1 cup long grain white rice
2 cups cooked shredded chicken

2 tablespoons fresh parsley, chopped
1 tablespoon lemon juice
Instructions
1. Heat the olive oil in a large soup pot over medium heat. Add the diced onion, sliced carrots, and sliced celery. Cook for 6 to 8 minutes until the vegetables begin to soften.
