Description

A rich, creamy, flavor-packed dressing that skips the raw egg but keeps all the classic Caesar tang. Perfect for salads, wraps, marinades, and more. Whisked together in minutes using pantry staples.


Ingredients

¾ cup mayonnaise

2 cloves garlic, minced

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1 teaspoon Worcestershire sauce

12 teaspoons anchovy paste (optional)

⅓ cup finely grated parmesan cheese

Salt, to taste

Cracked black pepper, to taste

Splash of water or milk (optional for thinning)


Instructions

1. Mince and mash the garlic using a press or microplane into a fine paste.

2. In a medium bowl, whisk together mayonnaise, garlic, Dijon mustard, lemon juice, and Worcestershire sauce.

3. Stir in anchovy paste to taste for rich umami depth.

4. Fold in grated parmesan cheese and mix well.

5. Season with salt and pepper to taste. Add a splash of milk or water if you prefer a thinner dressing.

6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For the best flavor, always use freshly grated parmesan.

Letting the dressing chill is key—it enhances flavor dramatically.

If you’re sensitive to garlic, reduce it by half or roast it for a milder bite.
