Ingredients
2 lbs baby potatoes
3 tbsp butter
2 tbsp olive oil
3 cloves garlic
1 tsp salt
1/2 tsp black pepper
2 tbsp fresh parsley
Instructions
1. Wash and scrub the potatoes thoroughly, then cut them into evenly sized chunks.
2. Bring a pot of salted water to a boil and parboil the potatoes for 8–10 minutes until just fork-tender.
3. Drain the potatoes and let them dry slightly to remove excess moisture.
4. In a large bowl, toss the potatoes with melted butter, olive oil, minced garlic, salt, and black pepper.
5. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
6. Roast in a preheated oven at 400°F (200°C) for 35–40 minutes, flipping halfway through, until golden and crispy.
7. Remove from the oven and sprinkle with freshly chopped parsley before serving.
Notes
Make sure the potatoes are dry before roasting to achieve maximum crispiness.
Do not overcrowd the baking sheet, as this can cause steaming instead of roasting.
For extra flavor, add grated parmesan or a sprinkle of paprika before roasting.
