These High Protein Egg Bites are a quick and healthy make-ahead breakfast perfect for busy mornings. Packed with protein from eggs, egg whites, and cottage cheese, they’re light, fluffy, and customizable with your favorite vegetables and cheeses. Perfect for meal prep, freezer-friendly, and incredibly satisfying.
Ingredients
4 large eggs
4 egg whites
½ cup cottage cheese
½ cup shredded cheddar cheese (or Swiss)
½ cup chopped fresh spinach
⅓ cup diced bell peppers
¼ teaspoon salt
⅛ teaspoon black pepper
Optional: ¼ cup diced cooked bacon or turkey sausage
Instructions
1. Preheat your oven to 350°F (175°C). Grease a muffin tin or silicone mold with nonstick spray or oil.
2. In a large bowl, whisk together the eggs, egg whites, and cottage cheese until smooth. A blender can be used for extra fluffiness.
3. Add the chopped spinach, bell peppers, and shredded cheese. Season with salt and pepper. Stir to combine.
4. Divide the mixture evenly between the muffin cups, filling each about ¾ full.
5. Top with optional diced bacon or sausage if using.
6. Bake for 20–25 minutes or until the egg bites are puffed and lightly golden. A toothpick should come out clean.
7. Let cool for 5 minutes in the tin. Carefully remove using a knife if needed.
Notes
For ultra-smooth texture, blend the egg mixture with cottage cheese before adding veggies.
Use silicone molds to prevent sticking and for easy cleanup.
These bites freeze beautifully—wrap individually and store in a freezer bag for up to 2 months.
