Ingredients

1 lb Italian sausage

1 small onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 can crushed tomatoes (14.5 oz)

1 cup heavy cream

1 package cheese tortellini (20 oz)

3 cups baby spinach

1 tsp Italian seasoning

1/4 tsp red pepper flakes

1/2 tsp salt

1/4 tsp black pepper

1/2 cup grated Parmesan cheese


Instructions

1. Heat a large soup pot or Dutch oven over medium heat. Add the Italian sausage and cook until browned, breaking it into crumbles as it cooks.

2. Add the diced onion and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for 30 seconds.

3. Pour in the chicken broth and crushed tomatoes. Stir in the Italian seasoning and red pepper flakes. Bring to a gentle simmer.

4. Reduce the heat slightly and stir in the heavy cream until the broth is smooth and creamy.

5. Add the cheese tortellini and cook according to the package directions until tender.

6. Stir in the baby spinach and cook for 1 to 2 minutes until wilted.

7. Season with salt and black pepper.

8. Ladle into bowls and top with grated Parmesan cheese before serving.

Notes

Use spicy Italian sausage if you want a bolder, warmer flavor.

Add a splash of extra broth when reheating because the tortellini will absorb liquid as it sits.
