Ingredients
1 lb ground beef
2 medium zucchinis, sliced
3 cloves garlic, minced
1 small onion, chopped
½ cup cherry tomatoes, halved (optional)
2 tbsp soy sauce
1 tbsp olive oil
¼ tsp crushed red pepper flakes
2 tbsp chopped fresh cilantro or parsley (optional)
¼ cup sour cream or Greek yogurt (optional)
Instructions
1. Heat olive oil in a large skillet or wok over medium-high heat. Add ground beef and cook until browned, breaking it up with a spatula.
2. Push beef to one side of the pan. Add onion and garlic to the other side. Sauté for 2-3 minutes until softened.
3. Add sliced zucchini and cook for 5-7 minutes, stirring occasionally, until slightly browned and just tender.
4. Stir in soy sauce, crushed red pepper flakes, and cherry tomatoes if using. Let simmer for 2-3 minutes to combine flavors.
5. Turn off the heat. Garnish with chopped herbs and top with a dollop of sour cream or Greek yogurt if desired. Serve immediately.
Notes
Avoid overcooking the zucchini to keep it crisp-tender and prevent sogginess.
For extra spice, increase the red pepper flakes or add chili garlic sauce.
This stir-fry is best served fresh. Leftovers are great within 3 days when stored properly in the fridge.
