Description

These Healthy Mediterranean Chicken Tacos are a fresh, easy recipe packed with juicy seasoned chicken, crisp cucumber, sweet tomatoes, tangy feta, and creamy yogurt sauce. Ingredients

1 lb boneless skinless chicken breast

1 tbsp olive oil

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp ground cumin

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

1 tbsp lemon juice

1 cup Greek yogurt

1 tbsp lemon juice

2 tbsp chopped fresh parsley or mint

1/4 tsp salt

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely diced

1/3 cup crumbled feta cheese

1 avocado, diced

8 small flour tortillas


Instructions

1. In a bowl, coat the chicken with olive oil, garlic, smoked paprika, cumin, oregano, salt, black pepper, and lemon juice. Let it rest for 15 minutes.

2. In a small bowl, mix the Greek yogurt, lemon juice, chopped parsley or mint, and salt until smooth to make the sauce.

3. Dice the cucumber, halve the cherry tomatoes, finely chop the red onion, crumble the feta, and dice the avocado.

4. Heat a skillet over medium-high heat and cook the chicken for 5 to 7 minutes per side until golden and fully cooked.

5. Let the chicken rest for 5 minutes, then slice it into strips or bite-sized pieces.

6. Warm the tortillas in a dry skillet until soft and flexible.

7. Fill each tortilla with chicken, cucumber, tomatoes, red onion, feta, and avocado.

8. Spoon the yogurt sauce over the top and serve right away.

Notes

Let the chicken rest before slicing so it stays juicy.

Keep the toppings chopped small so the tacos are easier to fill and eat.

Warm the tortillas just before serving for the best texture.
