Ingredients

2 chicken breasts

1 cup white rice (uncooked)

1 ½ cups sweet corn (frozen or fresh)

½ red bell pepper, diced

½ green bell pepper, diced

¼ cup chopped fresh cilantro

½ cup Greek yogurt

2 tablespoons lime juice

1 garlic clove, minced

1 tablespoon olive oil

½ teaspoon paprika

½ teaspoon ground cumin

¼ teaspoon salt

¼ teaspoon black pepper

2 tablespoons water (for sauce)


Instructions

1. In a bowl, mix olive oil, garlic, lime juice, paprika, cumin, salt, and pepper.

2. Add chicken breasts to the marinade and refrigerate for at least 30 minutes.

3. Grill or pan-sear the chicken over medium-high heat until fully cooked, then slice into bite-sized pieces.

4. Cook white rice according to package instructions. Fluff with a fork and set aside.

5. In a hot pan, sauté sweet corn until lightly charred. Toss with a spoonful of yogurt sauce and chopped cilantro.

6. In a blender or food processor, combine Greek yogurt, cilantro, lime juice, garlic, salt, and water. Blend until smooth.

7. Dice red and green bell peppers.

Notes

For a smoky twist, char the corn on an open flame or broiler before tossing it into the bowl.
