Ingredients

2 cups graham cracker crumbs

½ cup melted butter

8 oz cream cheese, softened

1 cup powdered sugar

16 oz whipped topping, divided

20 oz crushed pineapple, drained

maraschino cherries, for garnish


Instructions

1. In a bowl, mix graham cracker crumbs and melted butter until combined. Press mixture into an 8×8 or 9×13 dish to form the crust. Chill while preparing the filling.

2. In another bowl, beat softened cream cheese and powdered sugar until fluffy and smooth.

3. Fold in half of the whipped topping to lighten the mixture.

4. Spread the cream cheese layer evenly over the crust using a spatula.

5. Spoon drained crushed pineapple over the cream layer, pressing lightly to set.

6. Top with the remaining whipped topping and smooth it evenly.

7. Garnish with maraschino cherries or extra pineapple if desired.

8. Refrigerate for at least 2 hours (or overnight) before serving.

Notes

Make sure to drain the crushed pineapple very well—excess moisture will make the layers runny.

Let the dessert chill overnight if possible; the flavors meld beautifully and it slices cleaner.
