Description

This Ground Beef with Potatoes Picadillo is a comforting, one-pan Latin-inspired dish made with savory beef, tender golden potatoes, and rich spices. It’s perfect for weeknight dinners, meal prep, or feeding a crowd. Simple ingredients, quick prep, and maximum flavor in under 45 minutes!


Ingredients

1 lb ground beef

3 medium gold potatoes, diced

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1/2 cup tomato sauce

1/2 cup beef broth

1 tsp ground cumin

1 tsp dried oregano

1/2 tsp paprika

1 tsp salt

1/2 tsp black pepper

1 tbsp vegetable oil

1 tbsp chopped fresh parsley (optional garnish)


Instructions

1. Heat oil in a large skillet over medium heat. Add onion and bell pepper and sauté for 3–4 minutes until softened.

2. Add garlic and cook for another 30 seconds until fragrant.

3. Add ground beef, break it apart with a wooden spoon, and cook until browned and no longer pink. Drain excess fat.

4. Stir in cumin, oregano, paprika, salt, and pepper. Mix well to coat the meat with spices.

5. Add diced potatoes, tomato sauce, and beef broth. Stir to combine.

6. Cover and simmer over medium-low heat for 20–25 minutes until potatoes are fork-tender.

7. Uncover and simmer for an additional 5 minutes to reduce and thicken the sauce if desired.

8. Garnish with fresh parsley and serve hot.

Notes

Make sure to dice the potatoes evenly so they cook at the same rate and don’t turn mushy.

For a thicker consistency, uncover the skillet in the last 5 minutes to allow the sauce to reduce.

Add a small splash of vinegar or squeeze of lime before serving to brighten the dish.
