Ingredients

Shrimp (peeled and deveined, tails on)

Olive oil

Paprika

Chili powder

Garlic powder

Cumin

Salt and pepper

Avocado (diced)

Corn kernels (fresh, canned, or thawed frozen)

Tomatoes (diced)

Red onion (optional, chopped)

Fresh cilantro (chopped)

Lime juice

Greek yogurt or sour cream

Hot sauce or chipotle paste


Instructions

  1. Marinate the Shrimp: Toss shrimp with olive oil, paprika, chili powder, garlic powder, cumin, salt, and pepper. Let marinate for 15 minutes.
  2. Prepare the Salsa: Mix avocado, corn, tomatoes, red onion, cilantro, and lime juice. Season with salt and pepper.
  3. Make the Sauce: Whisk Greek yogurt or sour cream with lime juice, hot sauce or chipotle paste, salt, and cilantro.
  4. Grill the Shrimp: Cook shrimp on a hot grill or grill pan, 2–3 minutes per side, until charred and pink.
