Ingredients
2 boneless, skinless chicken breasts
4 pineapple rings (fresh or canned)
1/2 cup Hawaiian-style BBQ sauce (plus more for serving)
1 tablespoon pineapple juice (optional, for marinade)
4 burger buns (brioche or Hawaiian rolls preferred)
1/4 red onion, thinly sliced
1 tablespoon butter (for toasting buns)
Fresh cilantro, chopped (optional)
Instructions
- In a bowl, mix BBQ sauce with pineapple juice. Add chicken breasts, coat well, and marinate in the fridge for 30 minutes to 2 hours.
- Preheat grill to medium-high heat and oil the grates.
- Grill chicken for 5–6 minutes per side until cooked through (165°F). Baste with more BBQ sauce as it cooks.
- Grill pineapple rings for 2–3 minutes per side until caramelized.
- Butter the buns and toast on the grill, cut-side down, for 1–2 minutes.
