Description

 This tropical twist on grilled chicken sandwiches features juicy BBQ-marinated chicken breasts, caramelized pineapple rings, and crisp red onions stacked on a toasted bun. It’s an easy summer dinner packed with sweet, smoky, and tangy flavors that transport your taste buds straight to the islands.


Ingredients

2 boneless, skinless chicken breasts

4 pineapple rings (fresh or canned)

1/2 cup Hawaiian-style BBQ sauce (plus more for serving)

1 tablespoon pineapple juice (optional, for marinade)

4 burger buns (brioche or Hawaiian rolls preferred)

1/4 red onion, thinly sliced

1 tablespoon butter (for toasting buns)

Fresh cilantro, chopped (optional)


Instructions

  1. In a bowl, mix BBQ sauce with pineapple juice. Add chicken breasts, coat well, and marinate in the fridge for 30 minutes to 2 hours.
  2. Preheat grill to medium-high heat and oil the grates.
  3. Grill chicken for 5–6 minutes per side until cooked through (165°F). Baste with more BBQ sauce as it cooks.
  4. Grill pineapple rings for 2–3 minutes per side until caramelized.
  5. Butter the buns and toast on the grill, cut-side down, for 1–2 minutes.
  6. Assemble each sandwich with grilled chicken, pineapple ring, onion slices, and cilantro. Drizzle with extra BBQ sauce and top with the bun.
