Ingredients
2 cod fillets
1 cup cherry tomatoes
2 tablespoons olive oil
2 tablespoons fresh dill, chopped
1/2 cup heavy cream
1 tablespoon lemon juice
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Preheat your oven to 400°F (200°C).
2. On a baking sheet, toss the cherry tomatoes with 1 tablespoon olive oil, salt, and pepper. Roast for 20–25 minutes until blistered.
3. Season the cod fillets with salt and pepper.
4. Heat a grill pan over medium-high and add 1 tablespoon olive oil.
5. Grill cod fillets 3–4 minutes per side, or until opaque and grill-marked.
6. In a small saucepan, heat a splash of olive oil and sauté garlic until fragrant.
7. Add heavy cream and simmer until slightly thickened.
8. Stir in dill and lemon juice, and adjust seasoning to taste.
9. To serve, spoon sauce onto a plate, layer roasted tomatoes, and top with grilled cod.
10. Garnish with extra dill and serve immediately.
Notes
Don’t skip drying the cod fillets before grilling—excess moisture prevents a good sear.
Use thick-cut cod for easier grilling and better texture.
Add the lemon juice after removing the sauce from heat to preserve its brightness.
