Ingredients
1 ¾ cups all-purpose flour
½ cup unsalted butter, softened
¾ cup granulated sugar (plus extra for caramelizing)
2 large eggs
1 tablespoon lemon zest
½ cup lemon curd
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon baking powder
Instructions
1. Cream together butter and sugar until light and fluffy.
2. Add eggs one at a time, beating well, then mix in vanilla and lemon zest.
3. In a separate bowl, whisk flour, salt, and baking powder, then fold into wet ingredients.
4. Scoop dough onto a lined baking sheet and create shallow wells in the center.
5. Bake at 350°F (175°C) for 10-12 minutes until edges are golden and centers are soft. Cool completely.
6. Fill cookie centers with lemon curd using a piping bag or spoon.
7. Sprinkle granulated sugar over curd, then caramelize with a kitchen torch until golden and glassy. Let set before serving.
