Description

These Golden Herb Roasted Baby Potatoes are roasted to crisp, golden perfection and infused with garlic and fresh herbs. They’re the perfect versatile side—simple enough for weeknights, yet elegant enough for entertaining.


Ingredients

1.5 lbs baby potatoes

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh rosemary or dill, chopped

1 teaspoon salt

1/2 teaspoon black pepper

Optional: 1 teaspoon lemon zest or 2 tablespoons grated parmesan


Instructions

1. Preheat oven to 425°F (220°C) and prepare a baking sheet with parchment or light oil.

2. Halve the baby potatoes uniformly to ensure even cooking.

3. In a mixing bowl, toss potatoes with olive oil, garlic, herbs, salt, and pepper.

4. Spread them cut-side down on the baking sheet. Roast for 25–30 minutes, flipping halfway through.

5. Once golden and tender, garnish with extra herbs, lemon zest, or parmesan. Serve hot.

Notes

For extra crispness, let potatoes sit cut-side down undisturbed for the first 20 minutes of baking.

Don’t overcrowd the pan—use two sheets if needed for a better roast.

Fresh herbs are best, but you can substitute with 1/3 the amount of dried herbs.
