Ingredients
2 pounds boneless skinless chicken breasts or thighs
1/2 cup gluten-free soy sauce or tamari
1/2 cup honey
4 cloves garlic minced
2 tablespoons rice vinegar
2 tablespoons cornstarch
2 tablespoons cold water
1/4 cup chopped green onions optional for garnish
Instructions
1. In a mixing bowl, whisk together gluten-free soy sauce, honey, minced garlic, and rice vinegar.
2. Place chicken in the bottom of the slow cooker and pour sauce over the top.
3. Cook on low for 4–5 hours or high for 2.5–3 hours until the chicken is fork-tender.
4. Remove the chicken and shred using two forks.
5. Return shredded chicken to the slow cooker.
6. In a small bowl, mix cornstarch and cold water into a slurry.
7. Stir the slurry into the sauce and cook on high for 15–20 minutes until the sauce thickens.
8. Stir well, garnish with green onions, and serve hot.
Notes
Chicken thighs offer more flavor and stay juicier during long cooking than breasts.
Be sure to use a gluten-free certified soy sauce or tamari.
Don’t skip thickening the sauce at the end — it makes all the difference in texture and flavor.
