Description

Georgia Cracker Salad is a uniquely Southern classic that blends juicy tomatoes, crisp saltine crackers, creamy mayo, and fresh green onions into one surprisingly addictive dish. It’s quick, no-fuss, and best served immediately for the perfect creamy-crunchy bite.


Ingredients

2 cups chopped ripe tomatoes

20 saltine crackers

1 cup mayonnaise

1/2 cup sliced green onions

2 hard-boiled eggs, chopped (optional)

1/2 teaspoon freshly ground black pepper


Instructions

1. Chop the tomatoes into bite-sized pieces and slice the green onions. If using eggs, dice them now.

2. In a large mixing bowl, stir together the mayonnaise, black pepper, and green onions.

3. Gently fold in the chopped tomatoes and diced eggs.

4. Just before serving, crumble the saltine crackers by hand into chunky pieces and fold them into the mixture using a spatula.

5. Serve immediately for the best texture and taste.

Notes

For the best crunch, wait to add crackers until just before serving.

Use cherry tomatoes if you prefer less mess and more sweetness.

Duke’s mayonnaise is ideal, but any full-fat mayo will work well.
