12 oz rigatoni pasta

1 lb Italian sausage (mild or spicy), casings removed

3 tbsp unsalted butter

4 cloves garlic, minced

1 ½ cups heavy cream

1 cup grated Parmesan cheese

½ cup chicken broth

½ tsp salt (adjust to taste)

½ tsp black pepper

¼ tsp red pepper flakes (optional)

2 tbsp fresh parsley, chopped

Extra Parmesan cheese for garnish


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the rigatoni and cook according to the package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. Cook the Sausage: In a large skillet over medium heat, add the Italian sausage, breaking it apart with a spatula. Cook until browned and fully cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  3. Make the Garlic Alfredo Sauce: In the same skillet, melt the butter over medium-low heat. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Let the sauce simmer gently for 3-4 minutes.
  4. Add the Cheese and Seasoning: Gradually whisk in the grated Parmesan cheese, stirring until smooth. Season with salt, black pepper, and red pepper flakes (if using). If the sauce is too thick, add a little reserved pasta water to loosen it up.
  5. Combine Everything: Return the cooked sausage to the skillet, stirring it into the sauce. Add the drained rigatoni and toss until the pasta is well coated. Let it cook for 1-2 minutes to allow the flavors to meld together.
