This hearty dish brings together tender, golden-seared chicken bites seasoned with garlic and herbs, served alongside rotini coated in a rich and creamy Parmesan sauce. It’s the perfect one-skillet dinner that satisfies comfort cravings and keeps prep time minimal.
Ingredients
1 lb chicken breasts or thighs, diced
2 cups rotini pasta (uncooked)
3/4 cup grated Parmesan cheese
3 cloves garlic, minced (or 1 tsp garlic powder)
1 cup heavy cream
2 tbsp butter
1 tbsp olive oil
1 tsp Italian seasoning
Salt and black pepper to taste
Optional: red chili flakes, fresh parsley for garnish
Instructions
- Prepare the Chicken: Season diced chicken with salt, pepper, garlic powder, and Italian seasoning.
- Cook the Chicken: Heat olive oil in a skillet over medium-high. Add chicken and sear for 6-8 minutes until golden and cooked through. Remove and set aside.
- Boil the Pasta: In a large pot of salted water, cook rotini until al dente. Drain and reserve 1/2 cup of pasta water.
- Make the Sauce: In the same skillet, melt butter and sauté minced garlic for 1 minute. Add heavy cream and simmer for 2-3 minutes.
- Add Cheese: Stir in grated Parmesan. If sauce thickens too much, add reserved pasta water to loosen.
- Combine: Mix in cooked pasta until evenly coated. Add chicken back to the skillet or serve it on the side.
- Serve: Garnish with more Parmesan, cracked pepper, and parsley if desired.
