Ingredients

6 bone-in, skin-on chicken thighs

1.5 pounds Yukon Gold potatoes, cubed

4 cloves garlic, minced

2 tablespoons butter

2 tablespoons olive oil

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup freshly grated Parmesan cheese

1 cup shredded mozzarella cheese

2 tablespoons chopped fresh parsley (optional)


Instructions

1. Preheat oven to 400°F (200°C).

2. Pat chicken thighs dry, cube potatoes, and season both with salt, pepper, and Italian seasoning.

3. In a large oven-safe skillet, heat butter and olive oil over medium-high.

4. Sear chicken thighs skin-side down for 4–5 minutes until golden, then flip and cook for 2–3 minutes. Remove and set aside.

5. In the same skillet, add cubed potatoes and cook for 6–8 minutes until golden. Add minced garlic and cook for 1 more minute.

6. Return chicken to the skillet, nestling it among the potatoes. Cover with foil or lid.

7. Bake in the oven for 25–30 minutes, until chicken is fully cooked and potatoes are tender.

8. Remove foil, top with Parmesan and mozzarella.

9. Broil for 2–3 minutes until the cheese is bubbly and golden.

10. Garnish with parsley and serve hot.

Notes

For extra crispy chicken skin, sear a minute longer before baking.

Don’t skip drying the chicken skin — this ensures a perfect sear and helps render the fat.

Use freshly grated cheese for better melting and flavor over pre-shredded options.
