Garlic Herb Chicken with Creamy Mash & Roasted Carrots

Description

This comforting dinner brings together garlic herb-seared chicken thighs, rich creamy mashed potatoes, and tender roasted carrots. Each element complements the next, creating a complete, hearty plate that’s as satisfying to eat as it is simple to prepare.


Ingredients

4 bone-in, skin-on chicken thighs

4 garlic cloves, minced

2 tbsp fresh thyme, chopped

2 tbsp fresh parsley, chopped

1 tbsp fresh rosemary, chopped

3 tbsp unsalted butter

2 tbsp olive oil

6 large carrots, peeled and halved

4 medium Yukon Gold potatoes, peeled and cubed

1/2 cup heavy cream

2 tbsp butter (for mash)

Salt and pepper to taste

Optional: 1 tsp honey (for roasting carrots)


Instructions

  1. Sear Chicken: Heat olive oil in a skillet. Season chicken with salt, pepper, and herbs. Sear skin-side down for 5-6 mins until crisp. Flip and cook another 4-5 mins. Set aside.
  2. Garlic Herb Sauce: Lower heat. Add butter and garlic to pan. Stir until golden. Return chicken and spoon sauce over. Cover and simmer 10 mins.
  3. Roast Carrots: Toss carrots with oil, salt, pepper, and optional honey. Roast at 400°F for 20-25 mins until golden and tender.
  4. Mashed Potatoes: Boil potatoes until soft. Drain and mash with butter, cream, salt, and white pepper until smooth.
  5. Assemble: Plate mashed potatoes, top with chicken and sauce, and add roasted carrots. Garnish with parsley.
