Description

Garlic Butter Shrimp Scampi Lasagna is a luxurious dinner option that merges the buttery, garlicky flavors of shrimp scampi with the creamy layers of classic lasagna. Perfectly seasoned shrimp, rich béchamel, and melty cheese make each bite irresistible.


Ingredients

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

4 tbsp unsalted butter

6 cloves garlic, minced

1/4 tsp red pepper flakes (optional)

Juice of 1 lemon

1/4 cup dry white wine

2 tbsp chopped fresh parsley

Salt and pepper, to taste

9 lasagna noodles, cooked and drained

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups ricotta cheese

1 large egg

3 cups béchamel sauce (homemade or store-bought)


Instructions

  1. In a large skillet, heat olive oil and 2 tbsp butter. Sauté garlic and red pepper flakes.
  2. Add shrimp, season, cook until pink. Add lemon juice and wine, simmer. Stir in parsley.
  3. Mix ricotta with egg, half Parmesan, salt, and pepper.
  4. Preheat oven to 375°F (190°C). Spread béchamel in dish. Layer noodles, ricotta, shrimp, béchamel, mozzarella. Repeat layers. Top with béchamel, mozzarella, and Parmesan.
  5. Cover and bake 25 minutes. Uncover and bake 10-15 minutes more. Rest 10 minutes before serving.
