Ingredients
1 lb boneless, skinless chicken thighs or breasts
Salt and pepper to taste
2 tablespoons olive oil
3 tablespoons unsalted butter
4 cloves garlic, minced
1 cup heavy cream
1 cup freshly grated parmesan cheese (plus more for garnish)
12 oz linguine or fettuccine
2 tablespoons chopped fresh parsley
Instructions
- Season chicken with salt and pepper. In a large skillet over medium-high heat, sear chicken in olive oil until golden and cooked through. Remove and set aside.
- Lower heat, add butter to the skillet. Stir in garlic and cook for about 30 seconds until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Add parmesan and stir until melted and smooth. Season with more salt and pepper if needed.
- Cook pasta in salted boiling water according to package directions. Reserve 1/2 cup pasta water, then drain.
- Toss pasta into the sauce, adding a splash of pasta water if needed to thin. Add the chicken back to the skillet and warm through.
- Serve hot, topped with parsley and extra parmesan.
