Garlic Butter Chicken over Cheesy Cajun Rotini

Description

A creamy, spicy, and deeply satisfying pasta dish that features golden seared chicken breast over a bed of Cajun-spiced rotini in a luscious cheese sauce. Topped with fresh tomatoes and basil, this meal is perfect for weeknight indulgence.


Ingredients

2 boneless skinless chicken breasts

2 teaspoons Cajun seasoning (plus more to taste)

Salt and pepper to taste

3 tablespoons butter (divided)

3 garlic cloves, minced

8 oz rotini pasta

1 cup heavy cream

4 oz cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup reserved pasta water (as needed)

Cherry tomatoes and fresh basil for garnish (optional)


Instructions

  1. Pat chicken dry and season both sides with Cajun seasoning, salt, and pepper.
  2. Boil rotini in salted water until al dente; reserve 1/2 cup of the pasta water and drain.
  3. In a skillet, melt 2 tablespoons of butter and sauté garlic until fragrant.
  4. Sear chicken in garlic butter for 5-6 minutes per side until cooked and golden. Remove and rest.
  5. Add remaining 1 tablespoon butter and pour in heavy cream. Stir in cream cheese and melt.
  6. Add shredded cheddar and whisk until smooth. Season with additional Cajun seasoning to taste.
  7. Toss drained pasta into sauce, adding pasta water as needed to adjust consistency.
  8. Slice chicken and serve on top of pasta. Garnish with cherry tomatoes and basil.
