A creamy, spicy, and deeply satisfying pasta dish that features golden seared chicken breast over a bed of Cajun-spiced rotini in a luscious cheese sauce. Topped with fresh tomatoes and basil, this meal is perfect for weeknight indulgence.
Ingredients
2 boneless skinless chicken breasts
2 teaspoons Cajun seasoning (plus more to taste)
Salt and pepper to taste
3 tablespoons butter (divided)
3 garlic cloves, minced
8 oz rotini pasta
1 cup heavy cream
4 oz cream cheese, softened
1 cup shredded sharp cheddar cheese
1/2 cup reserved pasta water (as needed)
Cherry tomatoes and fresh basil for garnish (optional)
Instructions
- Pat chicken dry and season both sides with Cajun seasoning, salt, and pepper.
- Boil rotini in salted water until al dente; reserve 1/2 cup of the pasta water and drain.
- In a skillet, melt 2 tablespoons of butter and sauté garlic until fragrant.
- Sear chicken in garlic butter for 5-6 minutes per side until cooked and golden. Remove and rest.
- Add remaining 1 tablespoon butter and pour in heavy cream. Stir in cream cheese and melt.
- Add shredded cheddar and whisk until smooth. Season with additional Cajun seasoning to taste.
- Toss drained pasta into sauce, adding pasta water as needed to adjust consistency.
- Slice chicken and serve on top of pasta. Garnish with cherry tomatoes and basil.
