Ingredients
2 chicken breasts, boneless and skinless
3 cloves garlic, minced
2 tablespoons butter
1 tablespoon olive oil
8 oz rotini pasta
1 cup heavy cream
3/4 cup Parmesan cheese, freshly grated
1 tablespoon Cajun seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley
Instructions
1. Cut chicken into bite-sized pieces and season with Cajun seasoning, salt, and pepper.
2. Heat butter and olive oil in a skillet over medium-high heat. Sear the chicken until golden and cooked through. Set aside.
3. In a large pot, cook rotini pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water and drain the rest.
4. In the same skillet, melt a bit more butter and sauté garlic until fragrant.
5. Pour in the heavy cream, stirring well, then add Parmesan and Cajun seasoning. Stir until sauce thickens.
6. Add cooked pasta to the skillet and toss to coat in sauce. Add pasta water if needed to loosen.
7. Serve pasta on a plate, topped with garlic butter chicken bites. Garnish with fresh parsley.
Notes
Use freshly grated Parmesan for a smoother, melt-in sauce.
