Description
Funfetti Whoopie Pies are the ultimate throwback treat. Fluffy vanilla cake-like cookies loaded with rainbow sprinkles, sandwiched around a soft frosting center. Perfect for birthdays, celebrations, or just a cheerful baking moment.
Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
⅓ cup rainbow sprinkles
1 ½ cups marshmallow or vanilla frosting (for filling)
Instructions
1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
3. In another large bowl, beat butter and sugar until light and fluffy.
4. Add eggs one at a time, mixing well. Stir in vanilla extract.
5. Alternately add dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry. Mix until just combined.
6. Gently fold in rainbow sprinkles using a spatula.
7. Scoop batter with a medium cookie scoop onto the baking sheet, leaving room between each.
8. Bake for 10–12 minutes or until the tops spring back lightly.
9. Cool completely on a wire rack.
10. Spread or pipe frosting onto the flat side of one cookie, top with another to make a sandwich. Repeat for all.
Notes
For best results, use jimmies sprinkles instead of nonpareils to prevent color bleeding.
Let cookies cool fully before filling to prevent melting the frosting.
Use a piping bag for a clean, professional finish between cookies.
