Ingredients
4 slices brioche or soft white bread
4 oz cream cheese, softened
2 tablespoons powdered sugar
1 teaspoon vanilla extract
2 tablespoons strawberry jam or preserves
2 teaspoons lemon zest (optional)
2 tablespoons butter, for frying
Extra powdered sugar, for dusting
Instructions
1. In a mixing bowl, combine the cream cheese, powdered sugar, vanilla extract, and lemon zest (if using). Whip until smooth and fluffy.
2. Spread the cream cheese mixture onto two slices of bread. Spread strawberry jam on the other two slices. Press together to form two sandwiches.
3. Butter the outer sides of each sandwich like you would for grilled cheese.
4. Preheat a nonstick skillet or griddle over medium heat.
5. Place the sandwiches in the skillet and cook for 2–3 minutes per side until golden and crispy.
6. Remove from the skillet, let cool slightly, then slice and dust with powdered sugar. Serve warm.
