Ingredients
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 cup unsalted butter, softened
1 cup brown sugar, packed
1 cup granulated sugar
3 large eggs
2 teaspoons vanilla extract
3 cups apples, peeled and diced (Granny Smith or Honeycrisp recommended)
1 tablespoon cinnamon (for apples)
2 tablespoons granulated sugar (for apples)
Instructions
1. Preheat oven to 350°F (175°C) and grease a Bundt pan thoroughly.
2. Peel, core, and chop apples. Toss with 1 tablespoon cinnamon and 2 tablespoons sugar in a small bowl. Set aside.
3. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
5. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
6. Gradually add dry ingredients to the creamed mixture, mixing until just combined.
7. Gently fold in the apple mixture using a rubber spatula.
8. Pour batter evenly into the prepared Bundt pan and smooth the top.
9. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
10. Cool the cake in the pan for 15 minutes, then invert onto a wire rack to cool completely.

Make sure to cool the cake completely before slicing for clean cuts.
Tossing the apples with flour before folding helps prevent sinking.
