Description

A comforting twist on a classic, this French Onion Meatloaf with Melted Swiss brings the rich, savory flavor of French onion soup into a tender, juicy loaf. Topped with gooey Swiss cheese and sweet caramelized onions, it’s an impressive yet approachable dinner that the whole family will love.


Ingredients

1 ½ pounds ground beef (80/20)

2 large yellow onions, thinly sliced

3 cloves garlic, minced

6 slices Swiss cheese

¾ cup breadcrumbs

2 large eggs

1 tablespoon fresh thyme, chopped

½ cup beef broth

2 tablespoons Worcestershire sauce

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil


Instructions

1. In a skillet over medium-low heat, add olive oil and sliced onions. Cook slowly for 30–40 minutes, stirring occasionally. Deglaze with beef broth halfway through for rich flavor.

2. In a large mixing bowl, combine ground beef, minced garlic, breadcrumbs, eggs, Worcestershire sauce, chopped thyme, salt, and pepper. Mix just until combined—do not overwork.

3. Press the meat mixture into a 9×5 loaf pan. Bake at 375°F (190°C) for 35–40 minutes, or until the internal temperature reaches 155°F.

4. Remove from oven. Lay Swiss cheese slices on top, then spoon the caramelized onions over. Return to oven for 10 more minutes until cheese is melted and bubbly.

5. Let the meatloaf rest tented with foil for 10 minutes. Slice and serve with pan juices, mashed potatoes, or fresh bread.

Notes

Use freshly grated Swiss or Gruyère for extra melt and bold flavor.

For even richer onions, cook them a day ahead and chill until ready to use.
