French Onion Funeral Potatoes

Description

A creamy, cheesy, and onion-packed casserole that brings cozy comfort to any dinner table. Topped with caramelized onions and a crispy, buttery crunch, it’s a crowd-pleasing side or hearty main dish.


Ingredients

1 (32 oz) bag frozen shredded or diced hash browns

1 packet French onion soup mix

1 cup sour cream

1 can (10.5 oz) cream of mushroom soup

2 cups shredded cheese (Gruyère, mozzarella, or cheddar)

2 large onions, thinly sliced

3 tablespoons butter (for caramelizing onions)

3 tablespoons melted butter (for topping)

1 cup breadcrumbs or crushed cornflakes


Instructions

  1. Melt 3 tablespoons of butter in a skillet over medium-low heat. Add sliced onions and cook until caramelized, about 20-25 minutes.
  2. In a large bowl, mix sour cream, French onion soup mix, and cream of mushroom soup. Stir in cheese and half of the caramelized onions.
  3. Fold in the hash browns until evenly coated.
  4. Transfer mixture to a greased 9×13-inch baking dish. Top with remaining onions.
  5. Mix breadcrumbs or cornflakes with melted butter. Sprinkle over casserole.
  6. Bake at 350°F (175°C) for 40-45 minutes until golden and bubbly. Let sit 10 minutes before serving.
