Ingredients
1 (32 oz) bag frozen shredded or diced hash browns
1 packet French onion soup mix
1 cup sour cream
1 can (10.5 oz) cream of mushroom soup
2 cups shredded cheese (Gruyère, mozzarella, or cheddar)
2 large onions, thinly sliced
3 tablespoons butter (for caramelizing onions)
3 tablespoons melted butter (for topping)
1 cup breadcrumbs or crushed cornflakes
Instructions
- Melt 3 tablespoons of butter in a skillet over medium-low heat. Add sliced onions and cook until caramelized, about 20-25 minutes.
- In a large bowl, mix sour cream, French onion soup mix, and cream of mushroom soup. Stir in cheese and half of the caramelized onions.
- Fold in the hash browns until evenly coated.
- Transfer mixture to a greased 9×13-inch baking dish. Top with remaining onions.
- Mix breadcrumbs or cornflakes with melted butter. Sprinkle over casserole.
- Bake at 350°F (175°C) for 40-45 minutes until golden and bubbly. Let sit 10 minutes before serving.
