Ingredients
1 cup cottage cheese
1 ½ cups almond flour
4 large eggs
2 teaspoons baking powder
½ teaspoon salt
2 tablespoons melted butter
1 teaspoon apple cider vinegar
Instructions
1. Preheat the oven to 350°F (175°C). Line an 8×4 or 9×5 loaf pan with parchment paper and lightly grease it.
2. In a medium bowl, use a hand mixer or stand mixer to blend cottage cheese, eggs, melted butter, and apple cider vinegar until smooth.
3. In another bowl, whisk together almond flour, baking powder, and salt.
4. Gently fold the dry ingredients into the wet mixture using a silicone spatula until just combined.
5. Pour the batter into the prepared pan and smooth the top.
6. Bake for 35–45 minutes until golden and a toothpick inserted comes out clean.
7. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
For the fluffiest texture, make sure to blend the cottage cheese until it’s completely smooth before mixing.
Letting the bread cool fully helps set the structure and avoids a gummy center.
Store in the refrigerator wrapped tightly, or freeze slices for longer freshness—perfect for toasting!
